Alexis de Portneuf's taste profiles allow you to quickly identify a cheese’s intensity, aromas and texture. The colour code allows for a fast identification that will help you make the right choice, even when you are in a rush. Discover the cheeses under each profile and our tasting suggestions!
Our mild taste profile includes our cheeses with the lowest intensity. A same cheese can exist in a mild, a medium or a strong version, therefore the mild profile serves as an introduction to cheeses. These cheeses are to be enjoyed at the beginning of a cheese tasting. They are more subtle and their flavours are more delicate. Our mild cheeses have a strong taste of fresh milk and cream.
Our medium taste profile includes our cheeses with an intensity that is more pronounced. The slow maturing of these cheeses allows them to have more developed flavours and smells. They are the perfect addition to a cheese platter to balance the flavours. Their taste is flavourful without being too strong. They are slightly pronounced but accessible to all. Medium cheeses can easily be identified thanks to their aroma of dried fruits and nuts.
Our strong taste profile includes pressed cheeses and blue cheeses. They are essential on a platter in order to balance out the milder profiles. These cheeses are not sweet and should be eaten last. They have a smell of fresh flowers, a strong taste, a crumbly texture and a striking look.
