OUR STRONG CHEESES

Our strong taste profile includes pressed cheeses and blue cheeses. They are essential on a platter in order to balance out the milder profiles. These cheeses are not sweet and should be eaten last. They have a smell of fresh flowers, a strong taste, a crumbly texture and a striking look.

This profile contains two sub-profiles describing the diversity of aromas and textures of the Alexis de Portneuf cheeses. Discover them below.

Strong, Crumbly, and Rustic

This profile includes hard cheeses with a noticeable salty taste. Their aroma is a blend of nuts, cream, and ripe fruits. These cheeses are best consumed at the end of a cheese tasting due to their pronounced smell.

Aged Caprano

Goat cheese aged for 18 months, accentuated taste without ever reaching sharp hints that burn the mouth.
