Pear and lactose free Brie puff pastry tart

Celebrate spring with a recipe that's perfect for brunch, lunch, or even dinner! Combining a touch of sweetness with a hint of savoury, this pear and Alexis de Portneuf lactose-free Brie puff pastry tart is as delicious as it is versatile. Easy to prepare in a cast iron skillet, the different textures will delight all palates!

Ingredients

  • 1 (125 g) Alexis de Portneuf Lactose Free Brie
  • 1 Bartlett pear
  • 1 cup lactose-free crème fraîche 
  • 2 eggs
  • Salt and pepper
  • 1 package frozen phyllo dough, thawed
  • 2 tbsp. butter, melted
  • Fresh thyme, for garnish
  • Honey, for garnish
     

Directions

  1. Preheat the oven to 350°F.
  2. On a cutting board, thinly slice the pear, as well as the Alexis de Portneuf Lactose Free Brie. Set aside.
  3. In a bowl, place the crème fraîche, eggs, salt and pepper. Mix well with a whisk.
  4. Take a sheet of phyllo dough and fold it tightly on itself, like an accordion. Place the strip of dough in a cast iron skillet.
  5. Repeat with more sheets of dough, until the entire pan is completely covered. Brush with melted butter.
  6. Insert the slices of Brie cheese and pear through the strips of dough.
  7. Pour the liquid cream and egg mixture over all the ingredients in the cast iron skillet. Garnish with a few thyme leaves.
  8. Bake for about 35 minutes, or until the top of the tart is golden brown.
  9. Serve and enjoy!
