Sweet and Spicy Pear and Prosciutto Crostini with La Sauvagine Cheese

Ingredients

  • 30 ml (2 tbsp) honey
  • 2 ml (1/2 tsp) red pepper flakes
  • 2 large slices of thick, rustic bread
  • 125 g of Alexis de Portneuf La Sauvagine Cheese
  • 1 pear, cored and sliced
  • 4 thin slices of prosciutto
  • Coarsely chopped toasted almonds
  • Fresh basil leaves (optional)

Directions

  1. Set the oven rack to the middle position and turn the broiler on.
  2. In a small bowl, warm up the honey for a few seconds in the microwave, then stir in the red pepper flakes. Set aside while you prepare the toasts.
  3. Toast the slices of bread. Set the toasted bread on a baking sheet lined with aluminum foil.
  4. Slice the Alexis de Portneuf La Sauvagine Cheese and distribute over the toasted bread, then top with sliced pears. Cover with prosciutto. Broil for 3 to 5 minutes, just until the cheese melts and the prosciutto colors in spots.
  5. Transfer the toasts to serving plates. Garnish each serving with a drizzle of spicy honey, a sprinkle of chopped almonds, and some fresh basil leaves. Serve right away.
